Easter is a time for gathering with family or sometimes your closest friends when you’re an international student and you don’t get the chance to go home for the holidays. You can make it a traditional gathering with an Easter Egg hunt or how about making it original with some easter cupcakes! They are very easy and fun to make. The recipe is very basic, you make ordinary run of the mill cupcakes and add a chocolate nest on the top with mini eggs, giving you cute Easter Egg Cupcakes.
Makes 10 Cupcakes
Pre-heat the oven at 180 degrees
1.In a bowl mix together the (soft) butter, caster sugar and self-raising flour (sieve the flour to avoid lumps). Then incorporate the eggs and vanilla extract. Beat it softly, the mixture has to be creamy.
2.Divide the dough you just obtained in little tins and cook them for approximately 10 to 15 minutes.You know the cupcakes are ready when you put you knife in them and the blade is dry.
3.While the cupcakes are baking, prepare the icing: mix together the butter, icing sugar, milk and vanilla extract. Once you have removed the cupcakes from the oven, be sure to allow them to cool before before adding the icing.
4.You can use an icing bags to put the icing on the cupcakes but if you don’t have one you can just use a little spoon
5.In a pan mix together the cornflakes, chocolate and syrup. Heat them until the chocolate has melted. Once it’s done put the chocolate cornflakes on top of cupcakes with two chocolate eggs to create the nest. Then put them in the fridge for 30 minutes – until hard.
